Boil gnocchi in salted water with thyme sprig and olive oil as directed on packaging
Chop onions, bell peppers, and garlic and sauté in pan with 1 tbsp of oil. Slice a small piece of the scotch bonnet and add to pan. The more you add the spicier the sauce will be. Cook until fragrant and the onions are translucent.
Add in ground meat and cook through until brown.
Add tomato sauce and mix in.
Add seasonings to taste, mix, and let simmer for 10-15 minutes.
Drain the gnocchi pasta and add gnocchi to bolognese.
Add gnocchi bolognese to baking dish.
Top with mozzarella cheese and bake for 20 minutes or until cheese is melted and golden brown
