Instructions
Boil a pot a water, add salt, olive oil, and a sprig of thyme.
Add your pasta and cook until it's al dente. For about 6-8 minuted.
Clean the short rib with the juice of one lime. Soak for about 1 -2 minutes in cold water to remove any bone fragments on the meat.
Season the short rib on both sides.
Allow to marinate for 10 minutes, minimum. If your short rib comes with the bone still in, cut them into bite sized pieces.
Dice up the vegetables onions, tomatoes, red bell peppers, and mash your garlic cloves.
Heat up the extra virgin olive oil.
Sear your short rib on both sides until cooked through then remove from the pan.
Using the same pan, add your vegetables and sautee for 1-2 minutes.
Add the white cooking wine and mix.
Add the tomato sauce and heavy cream and mix. Allow to cook and reduce.
Add the meat back into the pan and add the pasta.
Mix and cook for 1 more minute.
Serve on a plate and enjoy!.
