Hey Foodies! This was my very first attempt at making Fluffy Soufflé Pancakes, Japanese Inspired. These were delicious especially with the sweet berry compote pancake topping. Ever since I saw those videos of the huge pancakes all over my Instagram and TikTok feed, I knew I just had to try to make them myself. - Flour. You only need a small amount of all-purpose flour to help bring the batter together.
- Baking Powder. The leavening agent of the batter that will help it rise to be tall and fluffy.
- Granulated Sugar. Will add a bit of sweetness to the batter.
- Eggs. The base of the batter and the meringue.
- Vanilla Extract. To enhance the flavor of the pancakes.
- Milk. Helps smooth and incorporate the batter together.
- Cinnamon/Nutmeg. Adds a delicious flavor and aroma to the pancakes.

What Can I Pair With My Fluffy Soufflé Pancakes?
Many things will pair well with pancakes, but here are just a few suggestions.
- Mix Berry Compote
- Whipped Cream

Gluten-Free and Dairy-Free Alternatives
I can’t guarantee the results for the pancakes because I’ve never tried alternatives in my recipe, but you can alternate the flour for gluten-free flour. You can also try switching out the milk for a plant-based milk like almond or coconut milk. I believe there are vegan options to make meringue. If you find one you can definitely let us know in the comments and tell us how the pancakes come out. I am always here for a healthy substitute and creating versatile recipes that anyone can use.
How To Make Fluffy Soufflé Pancakes
PANCAKE BATTER: Start by separating the egg whites from the egg yolks into two small bowls. In order to ensure your egg whites whip properly for the meringue, try your best to make sure no yolk gets into the egg whites in this process.
We’ll create the base of the batter first with the egg yolks by adding milk, vanilla extract cinnamon, nutmeg.
Then sift the flour and baking powder in a another bowl and slowing add to the egg yolk mixture.
MERINGUE: Use a hand mixer to beat the egg whites until it’s frothy and opaque. Add granulated sugar to the egg whites and continue to whisk until stiff peaks form.
Combine meringue with egg yolk mixture to create batter. Gently fold in meringue in parts to keep air bubbles and maintain thickness or the batter. Make sure not to over-mix the batter to over flat pancakes.
PANCAKES: Heat up a large non-stick pan with a lid and melt some butter.Scoop your batter onto the pan, cook for a minute, add a tbsp of water, cover with lid, and let cook for 2-4 moire minutes. Flip pancakes and cover with lid to cook the other side through.
Now it’s time for the fun part. Customize your pancakes. Grab your plate, and add as many toppings as you like. This day I made a Mixed Berry Compote and you can recreate the recipe . Then I added some powdered sugar, whipped cream, fresh strawberries, and a drizzle of maple syrup.
It was delicious, soft, and fluffy and I hope you enjoy this pancake recipe as much as I did. Enjoy!

Fluffy Soufflé Pancakes
Ingredients
Fluffy Soufflé Pancakes:
- 2 large eggs
- 1 tbsp milk
- 1 tsp vanilla extract
- ¼ cup flour
- ½ tsp baking powder
- 2 tbsp granulated sugar
- Sprinkle of cinnamon and nutmeg optional
Instructions
Make the Batter
- Separate the whites and the yolks from 2 large eggs in 2 bowls.
- Add the milk and vanilla extract into the egg yolk and whisk together.
- Sift flour and baking powder into the yolk mixture and combine.
- Set to the side to begin working on the meringue.
- Beat the egg whites with a hand mixer until frothy.
- Add granulated sugar to the egg whites.
- Add a sprinkle of cinnamon and nutmeg to mixture
- Continue to beat egg whites until sift peaks form with a glossy texture.
- Gently fold in the meringue into the egg yolk mixture in sections. Incorporate it by adding spoonfuls of meringue and gently folding it into the mixture Don't over mix in to avoid losing the air bubbles of the meringue. This is key to creating the soufflé pancakes.
Cooking the Pancakes
- Heat and melt butter in a nonstick pan.
- Use a ladle to scoop and stack batter onto pan creating a tall, thick pancake.
- Cook pancake for 1-2 minutes on low-medium heat.
- Add 2 tbsp of water to pan and cover with lid and cook for 2-4 minutes.
- Remove lid and gently flip pancakes.Add 1 tbsp of water. Cover with lid to cook pancakes for another 1-2 minutes.
- Once pancakes are golden brown, remove from pan
- Plate pancakes and serve with whipped cream, berries, powdered sugar, and maple syrup and ENJOY!

- The stiffer the meringue the better.
- Slowly incorporate the batter together.
- Piping the batter onto the pan by adding layers helps with achieving thickness and height of pancakes.
