Growing up as a kid, griot was my favorite dish, and I made sure everyone knew that. On those special days after school or on the special weekends, I would walk in to the smell of delicious griot being prepared by my mom in the kitchen. And she would look at me with a smile on her face and say, “I’m making your favorite.”
Some of my fondest memories would be her sneaking me a few pieces of griot before everything was finished. I would grab a small plate, stand beside her, and catch whatever pieces I could bargain. I’m sharing one of my favorite recipes with you because I feel like if you want an introducti on to Haitian food, you should start here. How To Make Haitian Griot | Crispy Fried Pork
PREPPING THE GRIOT
We are going to start off by grabbing our pork shoulder and cutting off the extra fat. Then we are going to cut the pork shoulder into 2 to 3 inch pieces. You can make them as big or as small as you like but they should be bite sized.
Next, we are going to clean the meat thoroughly. Grab two limes and cut them in half. Squeeze the lime juice limes over the meat and mix together. You can also use store-bought lime juice as well. Then we are going to wash the meat with hot water. This helps tenderize the pork prior to frying.
Now it’s time to season the meat. Grab the ingredients from the recipe and season the meat thoroughly. Make sure to mix the ingredients into the meat very well and allow it to marinate for 10 to 20 minutes.
BOIL THE GRIOT
When it comes to cooking Haitian food, in particular for preparing meat, it is very common for us to boil the meat prior to cooking the meat to serve. Whether that be baking, frying, air frying, grilling, or pan searing the meat, we typically boil it first. This process not only makes sure that the meat is super tender, it also allows all the flavor to get fully incorporated into the meat. This is an optional step if you’re not used to doing so in your normal cooking routine, but I highly recommend it if you want the authentic Haitian food experience.
Start by sautéing onions and garlic into a pot and then add the meat to get a slice year. Then add water to the pot until it’s about an inch above the meat. Cover the pot and let it boil for 20 to 30 minutes or until the majority of the water has reduced.
FRYING THE GRIOT
once the pork is tender now it’s time to fry it. There are many ways you can fry the pork you can either heat up some oil in a pan and fry it that way. Or you can put it in the air fryer and cook it but make sure that it doesn’t get too dry. Or you can use a deep fryer. Heat the oil up and fry the pork until it’s a crispy golden brown color.
TIME TO EAT
You did it! You’ve made Haitian Griot or Haitian fried pork. Now it’s time to eat. We like to garnish it with slices of red and green bell peppers and onions. Then, serve it with your favorite food have or it as a snack or appetizer, and just be proud of yourself that you made something so delicious.

Haitian Griot | Crispy Fried Pork
Ingredients
- 1 lb Pork Shoulder
- 2 tbsp Epis Haitian green seasoning
- 1 cup Lime Juice
- ½ cup Onion
- 6 Garlic Cloves
- 1 Scallion
- Cooking Oil
- ¼ Maggi cube Chicken Flavored Bouillon
- 1 tsp Paprika
- 1 tsp Black Pepper
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 1 tsp Crushed Red Pepper Flakes
- 2 tsp Adobo
- 2 tsp Seasoned Salt
Instructions
PREPARE THE PORK
- Cut pork shoulder into bite sized pieces.
- Remove excess fat if necessary.
- Cleanse meat with lime juice and rinse with hot water.
- Crush garlic, slice onions and scallions and add to the meat.
- Add seasoning to meat and mix togther. Let marinate for 10-15 minutes.
BOIL THE PORK
- Heat up a small amount of oil in pot.
- Sauté onions and garlic for 1 minute.
- Add meat to pot and let brown on both sides.
- Add water to pot and cover with lid.
- Boil the meat for about 20-30 minutes or until most of the liquid reduces.
FRY THE GRIOT
- Heat up oil in frying pan or deep fryer.
- Fry meat until golden brown.
- Garnish with onions, and red and green peppers.
- Serve and enjoy.
