  • Evaporated Milk. You can use your milk of choice. plant-based or dairy free.
  • Sugar. Brown sugar, granulated sugar or honey. Use as little or as much as you’d like.

How To Make Haitian Plantain Porridge (Labouyi Bannann)

PLANTAIN PREP: Rinse, peel, and chop a large green plantain. Then blend with water until it is a smooth liquid with no chunks.

MAKE PORRIDGE: Boil a pot of water with cinnamon stick and star anise until it is a brown tea color. Then pour plantain mixture into the pot. Stir continuously to avoid any lumps and burning. Cook on medium-low heat until the porridge thickens. Add you milk, salt, and sweetener, then cook for a few more minutes on low heat. Serve hot and Enjoy!

Plantain Porridge (Labouyi Bannann)

A creamy and sweet plantain-based porridge that is the perfect hot breakfast. A simple and delicious recipe that is easy to make.

Ingredients
  

  • 1 Plantain
  • 3 cups of water
  • 2 Cinnamon Sticks
  • 2 Star Anise
  • Pinch of Salt
  • ¼ cup Evaporated Milk
  • 4 tbsp Sugar

Instructions
 

  • Rinse and Peel Plantain.
  • Cut Plantain into small sized pieces.
  • Add 1 1/2 to 2 cup of water to a blender.
  • Add Plantain pieces onto the blender.
  • Blend until liquid and smooth. If there are still chunks in the mixture, add a little more water and blend for another minute.
  • In a small to medium pot, boil 1 cup of water with cinnamon sticks and star anise.
  • Let the water boil for about 3-5 minutes, or until the water changes to a brown color.
  • Add the plantain liquid into the pot and stir continuously on medium heat.
  • As you stir, the porridge will reduce and thicken. Once it starts to boil, add your milk and a pinch of salt.
  • Continue to stir, then add your sweetener of choice. Brown Sugar, Granulated Sugar, or Honey.
  • Reduce heat to low, and let cook for a few more minutes.
  • Serve hot with bread and enjoy!.
