One thing us Haitians knows how to do is season our food. And a staple ingredient for many of our traditional Haitian dishes includes Epis, also known as a green seasoning blend.
It is a mixture of herbs and spices that adds a robust staple flavor base you’ll want to add to all of your meals.
Breakfast, lunch, and dinner won’t be the same once you start adding Epis to your pan.
We put Epis on everything: chicken, fish, beef, soups, rice, eggs, steak, salmon, pasta, legumes, stews, seafood, meat, poultry, and more. It is vegan, dairy-free, and delicious. Make a large batch and freeze for later, or prep a batch for the week to use.
Nothing beats fresh ingredients. Everyone needs some Epis.

What is Haitian Epis?
You might have seen similar versions of Epis all across the Caribbean. Some call it sofrito, and some call it green seasoning. It is a staple base for many traditional Caribbean meals.
It is typically a blend of various herbs, spices, peppers, vegetables, oil, and vinegar. It is the perfect marinade, and goes well with everything.
Some people like to blend a large batch to save for later, while others like to blend or mash and mix their choice of ingredients for each meal.
I grew up watching my mother do both. She always preferred having a the freshness that comes with making Epis for each meal. But also, sometimes she wanted the ingredients to not only be incorporated throughout the dish but also visible on display when served.
I of course take after my mother with preferring fresh Epis, but I also adore the convenience that comes with prepping and storing some for later. Here’s how to make Epis at home, and find out for yourself how amazing it is.

- Onion.

Storage Tips for Epis
- Store in airtight mason jars to preserve in the fridge for up to a week, or freeze in safe airtight container for up to 2 months.
- For accessibility, freeze portions using an ice cube tray with a lid, for easy use for each meal prep.

Haitian Epis Recipe (Caribbean Green Seasoning)
Ingredients
- 1 medium Onion
- 6-8 Garlic Cloves peeled
- 1 medium Green Bell Pepper stemmed, seeded
- ½ medium Red Bell Pepper stemmed, seeded
- 1-2 Scotch Bonnet stemmed
- 2 Green Scallions
- 1 bunch Parsley
- 2 sprigs Fresh Thyme leaves
- 1 large Lime juiced
- ½ cup Olive oil extra virgin
- 2 tbsp Vinegar white or apple cider
- 3 whole Cloves
- Seasonings:
- 2 tsp Salt
- 2 tsp Pepper
- 1 Maggi Chicken Bouillon Cube
Instructions
- Rinse all the veggies and herbs.
- Roughly chop the vegetables and herbs and lay to side.
- Add all the ingredients to a blender or food processor.
- Add your oil, lime juice, and vinegar.
- Begin blending by pulsing, then blend until smooth. Add extra oil if needed for an even blend,
- Transfer to airtight containers or ice cubes. Store in refrigerator for 1 week or in the freezer for up to 2 months.
- When ready to use. add onto meats as a marinade, or add to cooking oil when meal prepping. Allow to sauté, then continue on with normal steps when preparing meal. If using ice cube or freezer method, allow to thaw to room temperature before use.
